This stunning salad works just as well without the fresh pistachios – use the dried when they are not in season. Though, it must be pointed out that fresh pistachios are wonderful! They are just so pretty and their chewy texture works brilliantly within the salad. Serves 4.
seeds from ½ a large pomegranate
1 handful of fresh pistachios
4 large handfuls fresh herbs such as coriander, mint, Asian basil
4 baby cos lettuce leaves, torn into pieces
1 stem lemongrass, trimmed and outer skin removed then very finely chopped
2 kaffir lime leaves, stemmed and very finely sliced
½ an eschalot, peeled and very finely sliced
juice of 1 lime
2tlb extra virgin olive oil
salt to taste
In a large bowl, toss together the fresh herbs, lemongrass, kaffir lime leaves and shallot and set aside.
In a small bowl whisk the lime juice, olive oil, and a pinch of salt, until well combined. Pour this over the salad and gently mix.
Arrange the salad on a large flat plate. Sprinkle over the pomegranate seeds and pistachios then finish with a light drizzle of olive oil.
